I have the solution, with the backing of the folks who helped me test it. I have two USB keys one 32GB and a 64GB. All you need to do is plug them in and tell the VCS to boot off of it. That's it. You don't need to do anything else. You get a full version of Linux Mint and Retropie. I designed it to be super easy especially if you don't know Linux.
